So you have invested time and money to buy a good kitchen set withknives. In addition to your technique and the food you cut, cutting boards have the greatest impact on the performance of the knife and the durability of thecut. Your knife may cut boards that are too soft or, worse still, bury and bend at the edges, which can lead to blunting or chipping. 1. End grain
The best cutting board material, it’s beautiful and it won’t hurt your knives.
They’re the best of the best. It’s beautiful and reminiscent of an old-fashioned meatball. The magic of the last burr is that the wood fibers, the fibers, move up and down. It’s like having a bunch of straws. Putting them aside and cutting them into pieces is what a state of the art grain board is. A board with end grains when all the straws are on their feet. Prices vary depending on the wood, size and pattern. At the time of writing this article, a simple maple tablet costs about $120. Large shelves, cherries or nuts cost more.

2. Dust wood
I put the wooden planks above the rubber, but below the edge. The wood is simply sawn lengthwise and glued. They need less time and material to produce than the final grain, making them a more affordable option if you have a budget. Unfortunately, the chance of cracks is greater if they are glued and cut with knife marks. The maintenance is similar to that of the final grain, but you will probably have to grind and lubricate it more often.

3. Polyvinyl acetate (PVA)
I am no expert in plastics, and there are variations, some of which are heavier and denser. I haven’t tried them all, so I’ll just talk about what I particularly like. I think it’s one of the best wooded alternatives. It rests easily on the edge of the knife, is easy to clean, and you can even sharpen it if you hit it at the end. Corinne sells larger sushi bars, but has the same equipment in the home kitchen. I use exactly this house model to cut meat or fish, because it is easy to clean. This is the plate I bring to the catering instead of my very heavy 20 x 20 inch wooden meat block.

4. High density polyethylene (HDPE)
This is a standard plastic cutting board. Most restaurants use it. It will be so in most houses. They are cheap and widely available. Even your local supermarket has plates like this. Near the restaurants it is easy to undergo sanitary treatment, which is a pleasure for the sanitary inspectors. The disadvantage is that it’s too soft and your knife can leave marks. In these grooves, bacteria will grow. Over time it will absorb odors and look disgusting, but you can buy a new one for $12 to replace it, so everything will be fine.

At first glance, it seems like a good idea. Bamboo is terrible for your knives. It’s not a forest, it’s actually grass. In the construction of a bamboo board, the bamboo is shredded and converted into a board with glue. The glue hardens to a very hard material that will break your knife. No bamboo, please.

Care and maintenance: Oil boards for wood saws
Even the best chopping board needs the right care. About once a month, or when it seems dry, I wipe the board with mineral oil to prevent the wood from drying out. Mineral oil produced from petroleum is preferable to edible oils that run out over time. It is important to use a mineral oil of pharmaceutical or nutritional quality, because some of it comes into contact with food.
There are commercial stove oils that simply add a little beeswax to the mineral oil to ensure water resistance. You can buy them, but it’s cheaper to make them yourself. My recipe for edge butter consists of 5 parts mineral butter on 1 part beeswax. They are assembled by melting beeswax in a double boiler on the stove and ensuring that the mineral oil does not ignite at 335 F. You will need a pot of boiling water and a smaller pot on top. This ensures that the temperature never exceeds 212 F. It is ready when the beeswax melts in the oil. I’ve used white beeswax, which is found in the Amazon, but the yellow works the same way.
