A steak knife is one of the most neglected and least studied cutlery knives in the world. Few people, even professional cooks, understand what really goes into a steak knife. Many consider them as simple cheap knives that are good enough to cut a piece of meat, and most of them are not even as good as a stone axe for this job (in fact, the obsidian has the sharpest edge of all known in the world. 1В9). WHY DO YOU NEED A GOOD SET OF STEAK KNIVES AT HOME?
Is a quality knife really that important? At the end of the day, you can just take your steak and eat it, right? WHAT MAKES A GOOD STEAK KNIFE?
A good steak knife will change everything.
The first misunderstanding is that steak knives are just kitchen knives. I’m sure that’s not the case. Kitchen knives are used on wooden or polyethylene cutting boards, which can easily be attached to the edges of the knives. Steak knives are used on hard plates, which dull the edge very quickly. The same 420 stainless steel knife that makes a chef’s knife work will look terrible in a steak knife. You need solid steel that can still take the center line. I recommend at least VG-10, 4116 Krupp, T-12, 12c27 or similar steel. And they must be made of stainless steel, not carbon, because of the salt content of the meat (plus the extra salt that we add a lot to the table …). Nobody stops in the middle of a meal or leaves the table immediately afterwards to clean, grind and lubricate the steak knives, which should have been done with carbon-rich knives. You can paint in just 30 minutes. I don’t recommend the ceramic knife steak either. They do not have a good edge, are very difficult to grind and extremely vulnerable.
Then the set of steak knives should be nice and pleasant. And you use kits… Serving people with different knives is, in my opinion, the pinnacle of bad taste. If your atmosphere is that of a Western Steakhouse, you need matt wooden handles. To zoom in, you need Laguiole-style handles made of bone, good wood, horns and other materials. The brushed aluminium bowl is a trend in the best restaurants because of its modern look. They have to be light and have a good balance. They should be like an extension of your hand and make you want to use them. My personal home steak knives are so good in hand that sometimes I just repair the steaks so they can be used.
ADVANTAGES OF THE STEAK KNIFE SET
A well-chosen steak knife can make cutting much easier and more pleasant.
It’s easier to cut. The first and most obvious advantage of a large set of steak knives is that a steak that has been eaten or other food that needs to be cut during eating, such as half a chicken, leg quarters, corn chickens, ham patties, etc.will be much easier and more fun. There is nothing more disgusting and embarrassing than the fact that your piece of meat flies off a plate when you try to cut it. Good steak knives can even cut hard meat and are easy to sharpen.
Be proud of your steak knives. The next advantage is that good steak knives make you proud of your kitchen and your cooking skills, whether they are real or simply perceived. If you feel good, you can generally cook well, or at least as well as your abilities allow. But I’m sure there is absolutely no disadvantage to owning a good set of steak knives, and there is no advantage to owning a cheap, badly made, badly designed set. Well cooked food deserves respect and should be eaten with the best cutlery and the best dishes. Leave cheap things in cheap shops and do your kitchen and dining room a favour. Give them the cutlery they deserve.

With steak knives you have different grinding possibilities. We’ve already talked aboutsteel, so now we have to make a decision about grinding. Grinders are normally sharpened, and in any case they stay sharper longer than some other edges, and the ‘s can easily resharpen the ‘s because they are only sharpened on one side. But the sharp angle won’t give you a very bad edge. It’s a good compromise if you don’t want to worry so much about your knives. This is a common grinding on many knives by a Japanesechef.

For the rest, there are two schools of thought. Many believe that serrated knives cut much more efficiently, knives stay sharp longer than, and the cutting edges do not really touch the blade, so they do not fade so quickly. All in all, this is all true. And serrated knives are not that difficult to grind with modern grinding machines, many of which are specially designed for serrated knives. But they tend to crack and tear more than a normal knife, so they won’t make such a nice cut. Logically, you’re about to put a piece in your mouth and chew it into oblivion with great joy and pleasure, so in reality it’s not so bad. There’s nothing wrong with using a serrated steak knife.
The simple knives cut the meat like butter, but they touch the surface of the plate and in some cases can cause very unpleasant squeaking due to friction. They are dulled faster than serrated knives, but they are also easy to sharpen. It all depends on personal preferences. I use them both the same way.
BEST STEAK KNIVES: MY FAVORITE OPTIONS
In short, you want steak knives with good steel, healthy and good looking. If you’ve already eaten the perfect steak with a good steak knife, you’ll never want to see the cheap one again. It may be subjective, but steak really tastes better if you cut it with a good knife. I conclude this article with a few criticisms of what I think are the best values for good steak knives, from the best to the minimum. These are not the only good knives, and my opinion is probably different, but it will give you a good starting point in your search for the perfect steak knives.

At the top of the list is this classic from France. No other steak knife looks like a Laguiole. Of course Laguiole is not a trademark, but a style of knife that was invented long ago in the Laguiole region of France. Many companies make knives in the style of Laguiole, but Laguiole En Aubrac is one of the best. All real Laguiole knives are still made by one of the few small companies in Lagiola, France. Lagiolais de L’Artisan. Their knives, cut like Mora or Opinel, are hard enough for what they are made for and absolutely beautiful. They are balanced and fit like no other cook’s knife I can imagine. These are quick-release instruments in the world of culinary cutlery. The bowls range from stainless steel, to simplified beauty, to bones and exotic woods. And what’s really nice about Laguioles is that they, like their cousins, the Opinions, are not terribly expensive. They come in a nice wooden presentation box. The price is not bad for the quality. But beware… There are dozens of cheap Chinese forgeries (read;fake) and lower quality models, produced by many companies and advertised as Geniune Laguiole style, everywhere in circulation. The name of the brand is written on Laguiole knives and on the blade – the word France of Made in France. Is T-2 as durable as VG-10 in terms of steel? Of course not, but with the exception of a very extreme situation it is unlikely that you will have to use them for firewood sticks or mastodontics. They make them for cutting steak, and they do better than any cook’s knife I know.

Shun: Japanese quality kit

Victorinox: Excellent steak knives for the right price
Affordable 6-piece set from Victorinox.
The same people who make the big knives for the Swiss Army. They make a set of steak knives which, although belonging to the category Bugdet, are absolutely unbelievable and can compete with knives worth four times as much. Victorinox uses its own stainless steel, which is superior to both 420j and 440c. You take an almost surgical edge, hold it firmly and tighten it slightly. The leaves are covered with beautiful rosewood scales. Suitable and as pleasant as high-quality decors from other manufacturers. With a good sticker price for a set of 6 it is hard to see how you can go wrong.

Tire book: Cheaper, but still good

Sold mainly online, it has been very difficult to get real information about them, except that they seem to be doing well and have very good reviews. After a long investigation, it seems that they were made in China, with an 8cr13MOV stainless steel blade, with a full shaft. 8cr13MOV is a good type of table steel from China, in most cases better than 420j and equal to AUS 8. If you remember the story, steel was invented in China, and although they really make pathetic steel for inferior knives, they also make them that are as good as any knife made anywhere else in the world. 8cr13MOV is one of the best. These knives have a large cutting edge, hold well and are easy to sharpen. The scales have a matt finish, which I really prefer, and not a shiny finish. So you can see the natural beauty of the forest. The outfit I was looking at looked good, cozy and the weight was good. I’d rate it at least as good as the Victorinox game, maybe even better. The price is adjusted to a set of 6 pieces, with a nice well made wooden presentation box, I don’t understand how you can miss this one. Oh, and they come with a lifetime replacement guarantee. What else can you charge for this price?
