Here you will find some of the latest offers of high quality kitchen knives. These are brand knives that become sharp and stay sharp for a long time. Of course, if you treat them well (see my Top Ten Tips). They need to feel good in their hands and make sure you have fun in the kitchen. And most of them cost around $100 (although prices fluctuate, as does the price of plane tickets)!
I have selected a list that includes different styles and manufacturers of knives, but tends towards Japanese production. This means that many of these kitchen knives have thinner knives and are made of harder steel than their German counterparts. They take the super-sharp edge and keep it longer – but you have to be more careful with them. You can’t get through the bone without breaking the edges. Capice?
Each of these chef’s knives/Santoku is an ideal gift for someone who loves to cook and who loves nicely decorated things.

Kitchen knives from all over the world are made in Japan and look like an artifact of the future. They are meticulously crafted, light and refined. (Anthony Burden, the head of Celeb, was sworn in on Global).
The Classic Chef G2 (above) is one of Global’s most popular models. The shape of the blade is similar to that of a traditional chef’s knife – a very similar knife. He has slightly thinner points and a thinner stomach than the average German cook, but he still has the potential to become a serious cook.
Shun Classic Santoku, 7 inch

Together with Global, the Shunhas become one of the giants of the Japanese kitchen knife world. With its unpretentious simplicity and the wavy design of the damascus blades, the Classic line is reminiscent of traditional Japanese knives combined with western design. The design of the handles of Japanese sword blades consists of a harder steel core (VG-10) sandwiched between layers of softer stainless steel. The stem makes the cut, while the outer layers protect and decorate. Elegant, but sharp! I’ve been through this santoku and I love the feeling. Comfortable and balanced. He’s smart. …but a wide blade has enough umph to withstand the hard work.
Miyabi Kaizen II cook, 8 inches

The boutique brandMiyabi , produced in Seiki, Japan, was taken over by Henkels a few years ago. The Kaizen line is a mix of Japanese and German knives (originally), specially designed for Sur La Table. The Kaizen II uses a new fine-grained stainless steel (FC61), the same steel that Bob Kramer uses in his Chef Essential, giving it an ultra-fine edge. Like Shun (above) it consists of a hard core covered with layers of softer steel that protects and creates Damascus patterns. Can a $100 kitchen knife really be that sexy? (Pssst: If you like kaizen-damascus but prefer a smaller knife, the santoku Miyabi Kaizen II [VG-10 steel] will make your dreams come true).
STAALKNIFE The quality of the steel from which the kitchen knife is made is the most important property. A first quality knife cannot be made from second quality steel. All kitchen knives recommended on KKG’s website (unless specifically mentioned) are made of high-grade steel.
Wusthof Classic Icon Chef, 8 inch

Wusthof Classic Ikon is one of my favorite kitchen knives. I like the curved ergonomic handle; it is not only beautiful but also comfortable for a handshake. This is German steel, so unlike Japanese knives this shaft is not so fragile and you don’t have to be so careful. It’s also a stronger note that some might prefer. Personally for me? I like German and Japanese. (If you want to attract more attention, there’s a set of 7 classic Ikon blocks. It’s not for sale, but it still costs $120 less than if you bought them all separately).

Designed by the legendary American knife maker Bob KramerCollection Meiji combines East and West on a whole new level of quality and style. Believe it or not, they’re handmade from start to finish. In the city of Seiki, Japan, where the samurai sword is located. Like the Shun concept and the German Miyabi leaf, the leaf consists of a sandwich body and a Japanese handle. But the blade is wider and the balance and feel are different (more space for the joints on one side). Simply put: The birchwood of Miyabi is a baby under the kitchen knives. But to continue the metaphor: It’s a baby with brains. Not only is it great, but it also comes from the factory, probably sharper than any knife on this side (well, maybe Meiji). And it stays sharp longer because the steel from which it is made (SG2) has been heat-treated to a Rockwell hardness of 63 (two points higher than any knife on this side). I smoke a birch stake in my dirty gloves, and I feel… …you know, like real, untreated wood and dirt. Give this to a chef who appreciates the best in life – he’ll never forget the moment he opened the box. (Unlike Meiji, Birch Forest has a full range of knives, including multi-dimensional chefs).

Besides Wusthof, Henckels is another large German knife manufacturer that has been making kitchen knives for centuries. Their new Four Star line celebrates its 40th anniversary and the quality of the blade remains at a high level. In this sale you get two knives – an 8-inch cook’s knife and a 4-inch cutting knife – for the price you normally pay for a knife. The ergonomics of Fruit Cleaner make it one of my favorites for cleaning fruit – the handle at the base of the handle holds it firmly in the palm of my hand.

The most unusual thing about this Global three-piece set is that it gives you a real bread knife (most three-piece kitchen knife sets offer , not). So you start with the third core, the three most useful knives in your kitchen. It’s a great wedding present. The only compromise is that the cook’s knife is a bit short, it should be 8 inches long. If you do a lot of heavy work in your kitchen (for example, chopping a large onion, etc.), you won’t like this cook’s knife as your main support.

As already mentioned, the Henckels Pro line is an elegant remake of the classic German kitchen knife. The advantage of this set is that instead of the obligatory utility knife (which is rarely used), you get a Santoca, which is very handy for small jobs. And the presence of two universal knives – Koch and Santoku – allows two chefs to work in the same kitchen at the same time. The only negative, of course, is the missing bread knife. But you can choose a cheap song that will easily do the trick and fill the set: OXO Good handles, 8 inch bread knife / Henckels International Fine Edge Pro, 8 inch bread knife.
